Sweet Potato Fries
August 15, 2010

Until recently, only a few people knew that I love to cook. For awhile I was even thinking about taking some courses at a nearby culinary school. So far that has yet to work out since they want me to be there an extra 6 hours a day, but it doesn’t stop me from taking matters into my own hands. This is the first of my recipes, although not a very difficult or fancy one. But it’s the perfect addition to any summer menu. Well, any summer menu with a space for fried food…
Directions
1. Peel the sweet potato and cut it into fry-like shapes.
2. Soak the potato in water for about 5 minutes.
3. While the fries are soaking, heat vegetable oil in a skillet on medium.
4. Add a few pieces at a time. Cook until they’re soft and beginning to turn brown.
5. Remove the fries from the oil and place in a bowl. I usually put a napkin at the bottom of the bowl to soak up the extra oil.
6. Load on the brown sugar and cinnamon.
7. Serve and enjoy.

Chuck: That’s definitely a good point. I did that the first few times around, and I still do that when I make regular french fries. Good advice for those that like a crispier fry.

I love good homemade french fries; especially those made with sweet potatoes. Try them with soy sauce.

Sweet potatoe fries have to be my favorite food of all time. Thank you for the recipe, let’s hope I don’t abuse it!

If you want them extra crispy, right before serving them (and after letting them towel dry for a few minutes) crank the heat up on the oil to around 350, and do a quick flash fry. Seals in the cooked potatoey goodness and gives them a crispy layer frying them on medium can’t.
